Kohlcannon

We're back, with another dose of hearty comfort food, that fits very nicely into a low carb lifestyle! Featuring ground caraway seed, cauliflower and slightly pickled cabbage, Kohl-cannon (from Blumenkohl which is the German name for cauliflower) is a decidedly German twist on Colcannon, a traditional Irish dish made with potatoes. This has quickly become …

Easy Egg Muffins

Hello friends! Last week's conference was an opportunity to test our skill at frugal travel! As I have mentioned here before, we are artists and musicians, relying heavily on the gig economy for our incomes. A hotel room AND restaurant meals was a bit too "spendy" for us. We needed some travel-ready food for both …

Eggplant Lasagna

This hearty lasagna uses thinly-cut eggplant in place of carb-filled pasta noodles. The trick here is to slice that eggplant nice and thin (slicing the short way makes this easier) before roasting to keep it tender, melt-in-your mouth gooood! We love the subtle, smoky flavor that the roasted eggplant brings to this dish and don't miss those noodles one bit... (read more)

Tallow Seared Steaks

Steak is definitely not off the menu here in the winter months – when the cold weather comes, I grab a few choice grass-fed cuts, my cast iron pan, and my jar of beef tallow and enjoy a simple and delicious meal of pan seared steaks with veggies and... [read more]

Hearty Sausage & Vegetable Soup

The weather report here is calling for our first possibly major winter storm of the season! We're busy today battening things down here, at our little cabin. We've got a nice big stack of dry wood and kindling ready to go by the woodstove, shovels by the door, flashlights and candles at the ready, some "power optional" projects and reading lined up, and a nice big pot of Hearty Sausage and Vegetable soup simmering on the stove... They freeze well and you can thaw them quickly in the toaster. Start to finish, you can have a batch of these finished in 30 minutes! Add 2 teaspoons of vanilla and your favorite low carb sweetener for a sweet waffle, or a half cup of your favorite shredded cheese and a pinch of dried herbs for a more savory snack... (read more)

Grain Free Granola

Maybe it is the colder, darker days, the abundance of candy and treats on offer everywhere, or maybe because it seems like stores pipe in the scents of cinnamon and vanilla during the holiday season... whatever the reason, I seem to crave more sweet food this time of year than any other...(read more)

Roasted Butternut Soup

Here's an easy way to enjoy winter squash, which is now in season! We are often able to get a big box full of them super cheap as our local farms close up shop for the winter. We enjoy this creamy, comforting and nutritious soup often throughout the winter months. For our readers in the US, this simple, tasty soup would make a nice first course for the upcoming Thanksgiving holiday...

We've just returned to our cabin from a week-long, relaxing and fun camping retreat with a bunch of our music-loving friends! So much fun, and a great way to connect with nature, get some good quality face-to-face time, be creative, play music, enjoy the sun and then the glow of a campfire and music/stories against the darkness, and just let go of the stress and details of day to day life. These are all things that we have tried to become more mindful of – in addition to eating well – as we pursue better health...(read more)
