The weather report here is calling for our first possibly major winter storm of the season! We're busy today battening things down here, at our little cabin. We've got a nice big stack of dry wood and kindling ready to go by the woodstove, shovels by the door, flashlights and candles at the ready, some "power optional" projects and reading lined up, and a nice big pot of Hearty Sausage and Vegetable soup simmering on the stove... I remember missing bread-like foods when I was first getting started, so I thought that today might be a good time to share this recipe. These waffles are simple to make. They freeze well and you can thaw them quickly in the toaster. Start to finish, you can have a batch of these finished in 30 minutes! Add 2 teaspoons of vanilla and your favorite low carb sweetener for a sweet waffle, or a half cup of your favorite shredded cheese and a pinch of dried herbs for a more savory snack... (read more)

Maybe it is the colder, darker days, the abundance of candy and treats on offer everywhere, or maybe because it seems like stores pipe in the scents of cinnamon and vanilla during the holiday season... whatever the reason, I seem to crave more sweet food this time of year than any other...(read more)

Here's an easy way to enjoy winter squash, which is now in season! We are often able to get a big box full of them super cheap as our local farms close up shop for the winter. We enjoy this creamy, comforting and nutritious soup often throughout the winter months. For our readers in the US, this simple, tasty soup would make a nice first course for the upcoming Thanksgiving holiday...

We've just returned to our cabin from a week-long, relaxing and fun camping retreat with a bunch of our music-loving friends! So much fun, and a great way to connect with nature, get some good quality face-to-face time, be creative, play music, enjoy the sun and then the glow of a campfire and music/stories against the darkness, and just let go of the stress and details of day to day life. These are all things that we have tried to become more mindful of – in addition to eating well – as we pursue better health...(read more)
