We love scallops: perfect, tasty, bite-sized packages full of protein, vitamins and minerals! They are a bit spendy, and so we reserve them for special occasions when we want to get fancy here at the cabin.
Here’s our favorite way to prepare and enjoy them! Searing in butter brings out the salty flavor, which is beautifully balanced by the slightly sweet, creamy parsnips (another reason we only enjoy this dish very occasionally), and brightened by a simply dressed salad of fresh greens – delicious and deceptively easy!
Make the parsnips first and keep them warm. Then dress the salad, just before you put the scallops into the pan.

Pan Seared Scallops
- 2 lbs fresh/frozen jumbo scallops
- 2 cloves fresh garlic, peeled and minced
- 4 tbsp butter
- Melt butter in a skillet over high heat.
- Add garlic and saute for 15 seconds.
- Add fresh/thawed scallops, let them sear for about 1.5 minutes on each side until they are browned on the outside and translucent white in the middle. Get them off the flame and out of the pan quickly so that they remain tender – they will continue to cook for another minute or so.
- 2 lbs peeled parsnips, chopped into 1″ chunks
- 2 cups heavy cream
- Simmer parsnips and cream over medium-low heat until parsnips are tender and most of the liquid has evaporated (about 30 minutes).
- Remove from heat and puree right in the pot with immersion blender until smooth, adding more cream if necessary to achieve desired consistency.
Simple Side Salad
- 1 container/bag fresh salad greens of your choice
- Olive oil
- Balsamic vinegar
- Salt and Pepper
- Lightly dress greens to taste just prior to serving.
