Keto Roll Ups

Hello! Hope everyone had a great weekend!

We had to travel this past week for a side project we’re working on together. We weren’t sure what the food situation would be at our destination, and so we cold-packed a few trays of these tasty and filling keto roll-ups to bring along. Our garden is producing lots of cucumbers and cherry tomatoes right now, so we put those fresh ingredients to good use! These roll-ups were easy to make and were great for lunch/snacking while we were on the road!

Ingredients:

  • 1/4 lb thickly sliced deli chicken
  • 4 oz cream cheese, softened
  • 4 Dill pickle spears

Directions:

  1. Spread the cream cheese evenly over the chicken slices
  2. Add a dill pickle to one of the long ends of a slice
  3. Roll the cheese covered slice tightly around the pickle to make a tube
  4. Refrigerate until firm
  5. Slice the tube into individual “sushi” pieces with a sharp knife
  6. Keep chilled until ready to eat

Tomato Ham “Sushi” Ingredients:

(cut them in half if they are over 1/2 inch in diameter)
