Pastured Eggs

Hello and thanks for stopping by! This week it seems only appropriate to talk about one of my favorite foods…

While it is entirely possible to avoid eggs while following a low-carb lifestyle, we are happy that we don’t have to! Eggs are incredibly versatile: a quick fried egg wrap when time is short, hard boiled eggs for easy nutrition on the road, “clean out the fridge” scrambles, egg salad, deviled eggs, egg muffinsquiches, egg casseroles… the list of delicious savory egg dishes is long. And when baking, eggs are a fantastic “glue” to hold things together!

We are lucky to have a great source of local, pastured eggs – right here in our backyard. Our little cabin rental is part of a larger farm, which is home to two separate flocks of truly free-range chickens. Eggs marked “Free-Range” in the store are unfortunately often still grain-fed in large barns with “access” to an outdoor run (which many of the hens never actually use due to overcrowding).


Why go to the trouble and extra expense of keeping chickens or sourcing local pastured eggs? The benefits are many: improved nutrition per egg, a better life for the chickens, and the peace of mind that comes with supporting your local economy and knowing where your food comes from. An added bonus when keeping your own free-range flock is fantastic insect control! And finally – few things are more comical to watch than chickens running as fast as they can to get in on a treat! 🙂
