Cold snap! It’s pretty chilly out there this week. Definitely too cold for grilling, even for hardy cabin dwellers! If you are reading this from the Midwest US today, hang in there – we’re sending warm thoughts your way…
Steak is definitely not off the menu here in the winter months though – when the cold weather comes, I grab a few choice grass-fed cuts, my cast iron pan, and my jar of beef tallow and enjoy a simple and delicious meal of pan seared steaks with veggies and a liberally-dressed salad.
Here’s the method we use (and a lot more really good information besides!). We used the “flip once method” but I know many people who swear by the “flip often” as well. Which do you prefer?
We’ve been fans of steaks fried in beef tallow ever since we were introduced to them at a local “speakeasy” that features “old school” 1930’s meals. This is a great way to enjoy a steak anytime the weather is not so good for grilling outdoors!
