Hello, and thanks for stopping by! Maybe it is the colder, darker days, the abundance of candy and treats on offer everywhere, or maybe because it seems like stores pipe in the scents of cinnamon and vanilla during the holiday season… Whatever the reason, I seem to crave more sweet food this time of year than any other.
Now that we have embraced a low-carb/primal way of eating, this can be a bit trickier to manage than it used to be, but the benefits that we are enjoying here make it worth taking a little bit of extra time to make healthier treats.
For those who are feeling the same – here’s our version of Low Carb Granola:
Makes sixteen 1/4 cup servings, with about 5g net carbs per serving.
- 1 cup slivered almonds, chopped a little smaller
- 1 cup chopped pecans
- 1/2 cup unsweetened flaked coconut
- 1/3 cup whole roasted pumpkin seeds
- 1/3 cup whole roasted sunflower seeds
- 1/2 cup almond flour
- 1/4 cup flax meal
- 1/4 cup unsweetened dried cranberries or blueberries
- 1/4 cup melted butter or ghee
- 1 Tablespoon honey
(to bind the granola together—you could use any suitably sticky sugar replacement here to further lower the carb count)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- Preheat the oven to 250. Line a large baking pan with a piece of parchment paper.
- Add the flours, nuts, seeds, coconut, and cranberries to a bowl and mix.
- Add the melted ghee (or coconut oil), honey, vanilla, cinnamon, nutmeg, salt and mix thoroughly.
- Dump mixture onto parchment covered baking sheet and use a second piece of parchment on top to evenly press mixture out onto the sheet with a rolling pin or your hands.
- Bake at 250F for 1 hour.
- Remove from the oven, and cool completely before breaking into pieces.
Store in an airtight container in the refrigerator or freezer. Enjoy as a dry, crunchy snack; with a splash of cream; on top of yogurt; or with your favorite dairy-free “milk.” This snack is packed with calories (and nuts) so a little bit will go a long way!
